For what it is worth...my Savage 6.5 PRC is a straight up shooter and I have no issues at all with it. The 7 PRC is another offering that I would really consider. Little more punch for the bigger animals.
When it comes to processing at home honestly I use a fillet knife more than anything else. A few social accounts I follow that cut up a LOT of meat, big game and beef use that as their primary tool. So follow the pros I suppose.
