Desert Bighorn in Nevada because of the once in a lifetime chance to kill one. A mule deer hunt in Saskatchewan on private land would be my other one.

I can think of a few species in Washington DC but I'll save them for another time...

Wyoming moose would top the list but Wyoming sheep would be a close second. Western Kansas mule deer wouldn't fall too far behind.

Probably a desert sheep tag in NV. I really love the way those sheep look.

If you were to bend my arm, I'd also take a MT breaks ram tag, or even a AZ/UT elk tag.
