Antelope steak sandwiches.
Fry the strips of antelope, bell peppers, and red onions.
I spread a small layer of cream cheese on the hoagie, then pile on the meat and veggies, then cheese of choice, pepper jack and cheddar are my favorite. Then I put them in the oven for a couple minutes on hi broil to melt in the cheese and warm up the bun.

That looks good. Nothing too fancy for me tonight, just the last chunk of backstrap from last year's bull hitting the grill

First time cutting a flat iron out of a antelope. Not sure how I?m going to cook it yet but I?m pretty excited to try it.
Rumor on the street it?s the best steak on wild game...

Made sloppy lopes from the antelope I got last season. Possibly the best way I?ve eaten wild game. It?s delicious.

Cooked up some shanks off of my antelope. I basically used this recipe from youtube. Turned out fantastic, I probably put the potatoes in with the meat a bit too early but it worked out fine. I browned mine in a pan before moving them to the baking dish. My dutch oven wasn't big enough. I'll be cooking my shanks in a similar fashion in the future.

Nice! I've cooked antelope shanks too and they were delicious, though they did require quite a bit of cooking time.

Smoker is going to be rolling tomorrow!
5# pepperoni snap sticks, 5# regular snap sticks, #5 jalapeno and cheddar snap sticks, 10# salami, 10# jalapeno and cheddar salami, 10# of ring bologna, 4# teriyaki jerky, 3# garlic and pepper jerky, 3# regular jerky.
We're going to eat good this winter!!!

No pictures, but last night we cooked up some shanks from my bison osso buco style. Used the recipe from Hank Shaw's Buck Buck Moose book. The marrow from the shank is absolutely the best thing I've eaten from any game meat and gives the entire dish a deep rich taste! We ate it over polenta.

We cooked up the shanks because the vacuum seal on a couple of the packs from the processor had failed. Really looking forward to getting some steaks on the grill, they have really good marbling.

I've never had venison bacon before so I decided I'd try making some myself once. I started with 15lbs of venison and 10lbs of pork. I was a little worried about making 25lbs of bacon right off the bat considering I had never done it before but after burning through two grinders and making a huge mess in my smoker, I think it turned out pretty good. The wife and kids like it better than pork bacon so that's a win in my book!
