[emoji23] ...nah, jumbo guinea pigs...the "Peruvian Power Protein". lol

Actually, they're what they market out here as "Iowa Chops", which are just really thick cut pork chops. These things are 1.5" thick and incredibly tender and juicy. Get them seared good, then put the lid down for the last 5 min to roast them a little. Rest for 8 min before serving.

Pretty puny load, but its because its just me and my 16 yr old son. [emoji6]

Pretty special lunch too, because he was successfully discharged from rehab on Monday, after being away from home for 3 months during his treatment. We had to delay joining the rest of our family for our annual summer vacation in PA, so he could see his doctors early next week; after which, we'll be heading back "home" to western PA for vacation.
