Messed up pretty good this time

I have found a lot of reward to process all the animals we harvested myself and I find the entire process fun. However I have never ventured to far off the beaten path with trying to do my own sausage, snack sticks, thuringer, etc. well this year I tried to make breakfast sausage with one of our mule deer. So I found a recipe online that sounded good, was labeled as a basic recipe for wild game sausage, called for some basic ingredients and some Brandy, but when I mixed everything together threw the entire bottle of alcohol in it, and went to eat the first package of meat it turned out horribly disgusting! One of my downfalls was I never tried a sample to see if it would work (never ever doing that again), so now I have 30lbs of gross sausage that reeks of mule deer and brandy that I really don't want to throw away but it's that bad. Any thoughts as to if I can redeem myself and maybe make jerky or something? Maybe soak it in buttermilk? I'm hoping smoking some of it will make it somewhat desirable to eat if not I don't know what I'm going to do. Definitely has been a hard lesson learned.

I don't know that putting more spices in is going to do anything, but make it worse. If you went crazy heavy on the smoke in the smoker it might work, another thought would maybe try mixing in liquid smoke? That sucks though!

Do you have a dog? If you do then you just lightened your dog food bill. If the dog will not eat it then there is little hope for the meat.

Thanks for the great ideas, I do have a couple dogs at home, how would I go about possibly working it into their dry food?

When I eat stuff that tastes bad plugging my nose works pretty good. All joking aside if it tastes that bad it may not be safe to eat. I've never heard of seasoning meat with alcohol.

If you feel it is safe to eat and still want to salvage it, try mixing small portions of it into other sausages or burger meat.

You can always buy some meat and add more meat to the mixture. Granted it will be a blend of wild game and store bought but the added volume can cut down on the unpleasant taste. At least you will be able to eat it.

I wouldn't beat yourself up over it. Just throw it in the trash. I find making my own jerky, salami, sausage, etc. is a great thing to do with friends during the winter. I try alot of recipes but limit each to 5 lb tries so if I do have to throw away its not that big of deal. I have had things turn out for the bad so your not alone. I'm getting ready to try some maple breakfast sausage and some chorizo with my last remaining venison.

Throwing it away is actually illegal... You might try mixing it 50/50 with clean burger to make spaghetti or chili. Brown it on high heat and that should cook off the majority of the alcohol. You might also try making some into jerky with some hi-mountain seasoning? Dehydrating should also remove the majority of the alcohol flavor. For the future- Brandy should be used sparingly as it has a really strong smell and flavor.

Yeah dog bowl sounds good, but I agree cooking it first. Also mix it in slowly for their bellies to get adjusted. I think they do need some of the fiber in the dry stuff. Ours got kindof fat off the trimmings we were mixing in. Probably wouldn't hurt to talk to the vet I guess. Hopefully that is legal

When we do ours we always try to do about a 1/2 pound let everyone taste it to make sure it's to their liking and then go full scale, I've used whiskey to marinate duck meat it had a horrible smell but after I cooked it, it actually was pretty good. You may try cooking it and tasting it urself, the alcohol in it should cook out quit a bit especially if you don't do patties and just do it like taco meat all mixed up, and drain the grease might help. Not sure if you mixed any suet into it but may try that as well mix in pork or beef suet as well as some other burger and it may turn out good

I think the recipe called alcohol with sausages when they are ready, not mixing it with meat : )

You can try to add a lot of water soak for while and strain on colander then add some spices. Always try on small portion first, I always roast small meat ball and try it before stuffing sausage, especially with new recepie.

The Wyoming regs it was article 3 23-3-303 (a) something like needlessly allowing game meat to go to waste. Maybe there was a better place. Sounds like there are some options to try before throwing away. I was checking to make sure the puppy thing was legal since I told on myself without checking. I didn't see it as illegal I guess.
