I have found a lot of reward to process all the animals we harvested myself and I find the entire process fun. However I have never ventured to far off the beaten path with trying to do my own sausage, snack sticks, thuringer, etc. well this year I tried to make breakfast sausage with one of our mule deer. So I found a recipe online that sounded good, was labeled as a basic recipe for wild game sausage, called for some basic ingredients and some Brandy, but when I mixed everything together threw the entire bottle of alcohol in it, and went to eat the first package of meat it turned out horribly disgusting! One of my downfalls was I never tried a sample to see if it would work (never ever doing that again), so now I have 30lbs of gross sausage that reeks of mule deer and brandy that I really don't want to throw away but it's that bad. Any thoughts as to if I can redeem myself and maybe make jerky or something? Maybe soak it in buttermilk? I'm hoping smoking some of it will make it somewhat desirable to eat if not I don't know what I'm going to do. Definitely has been a hard lesson learned.
