If you grilled them, the casing was okay. If you pan fried them or boiled them the casing would separate from the meat. Could have been something I did, but I don't really know what I would have to do different.
This is a really good book that i highly recommend. The recipes that i have made out of this book have all been top notch. If your not into the from scatch method another good place to by seasoning that i recommend is con yeager.
My 1st trial run of Trail Bologna this weekend using inedible collagen casings. Very happy with the results; took smoke well and bound to the meat. This is 80-20 beef-pork. Smoked over cherry. Cooking process took the better part of 10 hrs. I have enough confidence now to try this recipe with wild game next time.
