Why didn't it work?? Just too tough to eat?? I was figuring it would be easier for stuffing but if the product doesn't turn out, that is good to know.
If you grilled them, the casing was okay. If you pan fried them or boiled them the casing would separate from the meat. Could have been something I did, but I don't really know what I would have to do different.

This is a really good book that i highly recommend. The recipes that i have made out of this book have all been top notch. If your not into the from scatch method another good place to by seasoning that i recommend is con yeager.

My 1st trial run of Trail Bologna this weekend using inedible collagen casings. Very happy with the results; took smoke well and bound to the meat. This is 80-20 beef-pork. Smoked over cherry. Cooking process took the better part of 10 hrs. I have enough confidence now to try this recipe with wild game next time. 🤠
