Smoked Apricot Chicken legs.
I sliced the boneless breasts in half (next time ill flatten them with tenderizer mallet) sauted onion with cooked down spinach with the onions and provolone cheese got rolled inside. Then wrapped it tightly in daily's bacon (awesome bacon). Using tooth pics to keep it all snug. Between 275 and 300 rolling smoke with hickory. Last 15 minutes i coated in sweet baby rays mixed with chipotle tobacco. Turned out nice and moist. Before stuffing I coated chicken in a good dry rub.Ivorytip,
