While you are doing the peaches you also need to do some pineapple. When you eat the dried pineapple it is like a pure sugar boost.
I'll mix up peaches, apples, pineapple, and whatever other kind of fruit that I like into vacuum bags that I get from Cabela's that are resealable once you open them. My only problem is that once they are open I usually eat all of what is in it and never use the zip seal so that I can save some for later.
Those are so good! They have stands up in Gillette, we have been eating Flathead Cherries and peaches until we are sick. I need a dehydrator, we have canned the extras, but good idea with the dehydrator. The peaches make awesome muffins, too.

Yes peel them first then cut into 1/4" slices. Just make sure they are ripe. My friend got in a hurry and dried them before they were ripe and they weren't very good at all.
