Knife question

I'm very new to hunting but will be shooting and processing a few wild pigs soon. I'm looking for 1-2 knives, fixed blade, durable, easy to sharpen, easy to use. My plan is to field dress. Then skin, quarter, joint at home.

Can I do all of this with 1 knife? Any recommendations for knife and sharpening tool?

Victorinox Forschner 5 or 6"boning knife is what I use to butcher.


Amazon has them $12 to $20 and cheaper if you can find a sale. My wife steals them from me, they are that good.

For field dressing, a lot of guys (including me) like the interchangeable razor blade knives like the Havalon or Outdoor Edge. I typically go through 3 to 6 blades on a Havalon when dressing and skinning an elk at something like 30 to 40 cents a blade. I tend to snap my blades and like the knife that uses the thicker blades. Other guys don't do that quite as much as I do.

And as Team Kabob said, Victorinox Forschner makes a great knife for the money for meat cutting.

You could do it all with one knife, but how much fun would that be ;)

Outdoor Edge Razor series solved my Havalon blade snapping issues. I can do several animals with one, with a little touching up.

I was turned on to outdoor edge razors last fall. havalon's are sharp as hell but snap so dang easy. asking a guy what knife to use though is like asking a guy what gun to shoot. I have an old timers folding blade knife I keep with me just for the sake of it. that puppy has skinned and dressed out countless numbers of big game over the last 20 years.

The old vitorinox can do it all once you get handy. Gut,skin, debone! That easy, learn to hold it well and make it bend around corners and you'll look like a pro.

Scott, thanks for posting that video, it brings back memories. I'm waiting for my 2nd outdoor edge knife from re upping with EASTMANS.

Agreed!

I was a little disappointed on my first use. The blade it came with was not very sharp for some reason. I changed the blade and wow, just like the Havalon sharpness but with the stiffer blade. The knife is a little on the heavy side, but well worth the extra ounces...

Just in case you run out of ammo on your pig hunt, carry a big enough blade to stick em if you have to. (I guess it's just my inner Mic Dundee coming out when it comes to big knives) I use a havalon on the mountain, but when weight isn't concern, I have an assortment of fixed blades and folders that I use. A buck 110 folder is my favorite. Just fits my hand like nothing else.

As for sharpeners, diamond stones are the only way to go.

I use a buck vanguard to gut. I ordered a 6" mundial skinning knife and a mundial 6" stiff boning knife from the sausagemaker.com at $12 each they're great. They hold an edge for a very long time. I only sharpen after 2 deer. No rust and no chipping of the blade. They look brand new after 13 deer. I highly recommend them to everyone that butchers their own deer

I guess I'm just from the "old school". I like something I can sharpen. I do carry a Kershaw. It's pretty sharp but doesn't take an edge quickly. Years ago I got an Old Timer 2 blade. Doesn't necessarily stay sharp long, but takes an edge quickly and gets as sharp as a razor quickly. I carry a round stone, med. on one side/fine on the other. It's about the size of a can of chew and has been with me forever. I know there are better systems available today, but these things have been with me since the mid 70's and I just can't make myself replace them. The Old Timer has been in on every elk kill I have made and helped out with countless others kills. The Kershaw has a gut blade which is about as handy as a zipper.

I guess I'm "old school" too. I carry a buck 110 folding knife that is about 35 years old. It takes a while to get a good sharp edge on it but it stays sharp forever. Unlike those knives with replaceale blades I can get in between those leg joints and pry without any fear of snapping the blade.
I also started carrying an Outdoor Edge Swingblade combo that comes with the saw and knife in the same sheath. The saw is especially handy when cutting through the backbone of an animal.

I currently carry a buck knife with S30V steel. Didn't sharpen it for 2 elk last year. I also carry the Outdoor Edge Swingblade. Both knives get resharpened with the worx sharp tool and hold an edge for a long time. Just recently I picked up the Buck PakLite Elite (skinner and boning knife combo) in S30V as well. Hopefully I get to but it to use on this season's cow elk hunt.
