For something more exotic, but still within your budget (for the hunt, but not including travel costs), consider a caribou and/or musk ox hunt in Greenland. I did it in 2022 and it was a great experience. Prices have gone up some and the outfitter is now booked a couple years in advance, but you may want to take a look at it. Send me a PM if interested.
I'm leaving for this hunt in 7 weeks from today.
I booked 2 years ago for $4200. I see it's now at 1k more and has changed from 6 days to only 4 total. At least the outfit I'm going with.

A guided bison or cow elk hunt in Wyoming or Montana might fit your budget and still feel different from the usual stuff. I did a winter cow hunt a while back and had a blast, then warmed up the cabin with some lemon scented candles I’d packed, which made the place feel a bit less rough. You could also look at Canadian black bear hunts, which stay pretty reasonable and feel like a real change of pace.
