The whole elk preparation and care series on YouTube has been a good one. It has been a great answer every time the question comes up about the gutless method or meat prep.

Agree- even for guys like me who have done it a gob of times. There is always something to be learned imo.
Yup, it's amazing what you can learn. I have been humbled on more than one occasion by old timers who had some slick tricks.

It's worth doing in the back country. The jaw can weigh a lot. For elk if I'm packing it out on my back for more then a mile or two I leave the cape, and skull. More room for meat and a lighter load.
