Don't grind it. It makes great finger steaks. Just cut it up into pieces and deep fry, best way to eat it.

I cringed when I read the title lol. As Idaho cowboy said, cut it into thin slices and batter and fry. No better way to eat heart. To me grinding the heart would be like throwing the tenderloins in the stew meat bag.

I can't imagine grinding it up. I agree with the others, slice it up, dredge it in flour with salt and pepper, and fry it up... good eating!

My Mom would stuff it with cashews and wild rice and bake it in dough with two strips of bacon across it. Think elk heart wellington. Exceptional! Brings back memories eating that way back in the Selway.

Breakfast sausage. If you're not wanting to make your own, go buy some cheap Walmart sausage, add in the heart plus a bit more spice and you'll end up with a leaner and tasty product.
