Goose chili

Since i had a bunch of tenders left after making goose pastrami I decided to make chili. Turned out great

And most people toss away the thigh and top of goose legs of geese. I use all birds thighs and legs for something, tacos, spaghetti etc. Chop it ,slice it, grind it, make anything you want just add seasoning. I hate wasting food especially the food i work for!
I used to grind goose (sky carp) and make goose jerky, it's great.

I used to make a ton of good jerky every year. Cut the breasts in half and run them through my jerky slicer and let them sit in a cooler of salt ice water for a few days then rinse them and then ass about $50 worth of ingredients and let them sit in there for 3-5 days then dehydrate. It was a lot of work. I typically did 50 geese at a time to make it worth my while.

I haven't killed a good in years. I did pull the band off of a road killed goose a month ago though. lol I didnt call the band in yet.

while I have eaten duck and goose once or twice when and found it edible for the most part it just tastes "fowl " to me.

I've had the goose pastrami and it's great. I also use goose meat for a south american dish called anticushos, typically made using cow heart but the texture is the same and super delicious.

looks good, i'll be giving it a try when i process sausage in the next couple weeks
