Wow the list would be long. Here are a few that come to mind:

Pan down and rotate so I am looking south to find "north faces" for elk hunting.

Finding hidden water sources (green patches).

Green vegetation in arid areas.

Using the history of photos to look at the age of a burn, clear cut etc (example, photos from 2013 show no burn but there is one today, so around 3 years old).

Using the history of photos to look at a water source to see which hold water on the driest years (using that to find the most dependable water sources for my son's upcoming antelope hunt).

Finding the best used roads to access the area I am going.

Discovering glassing points. Go "stand" on that spot and see what can be seen.

Finding micro pockets that cant be seen or glassed from the road.

I love having unit/burn layers available. The measurement tool has been amazing. I know pretty much exactly how many miles my hike will be.

Google earth gives me the ability to intimately know the various ridges, drainages, trails and roads ETC before even entering a new area. GE is a huge confidence booster for me.

I use the Avenza app on my phone and Game Planner Maps. I checked them out after the last forum giveaway and saw their ad in my latest Journal. The app is free and the digital maps are great, and works without cell service. Anyway the cool thing is everything you record on the app ie waypoints, tracks, photos can be imported to Google Earth. Going to use it for patterning some late season bulls this year. They offer free downloads for unit boundaries and landownership too.

Like others have said, the number of layers available is really great, definitely a confidence booster.

I need to play more with the game planner maps. I use the stand method more than anything looking for good glassing spots, and looking for best routes in and out of new areas. sometimes that extra mile around beats the hell out of the 500 yard hill that looks good at the time.
