Elk tongue

Since I really like beef tongue I thought I would try an elk tongue if I get my cow this year. They are almost as big as beef tongue. I don't know why I never though of this before, guess I'm just a little slow. We've been wasting them all these years.:mad:
Have any of you guys ever tried elk tongue?

I've wanted to try it, I'm kinda into the trying more exotic things. And think it would be a cool deal to do in my hunting camps for clients as an appetizer type deal. You guys got good recipes for tongue? I like cooking heart and onions for clients when they kill it's been something I've done with my dad for a long time and it makes good appetizers tongue could be a fun thing to.

Here are a couple for you. The pickled tongue is fun to bring out when your drinking buddies are with you.


Cooked Tongue
1 qt - water
2 - slices of onion
2 - Bay leaves
6 - peppercorns
1/2 tsp - mustard seed
Do not add salt, it will make the skin hard to remove.

Mix spices with water and boil for 5 to 10 minutes.
Reduce heat and add tongue.
Simmer for 1 to 2 hours.
Drain liquid and rinse the tongue in hot water.
While hot, place the tongue in a pan of cold water to help loosen the skin.
Remove the skin.

Cut tongue into 1/4" thick slices. Eat in sandwiches, on crackers or just by itself.
It's delicious pickled too:

Pickled Tongue
Cooked and sliced tongue
1/2 cup - vinegar
1/2 cup - water
1/2 tsp - salt
onion slices
6 - peppercorns

Mix all the ingredients with the tongue slices.
Keep in fridge for 48 hours before eating.

Awesome I'm gonna have to do that, I can just see the guys faces now as I'm cut an elk tongue and telling them it's dinner, heart and tongue. I'll have to come up with an old Indian tale of how eating the tongue will help give you the spirit of the elk bugle

When I first started hunting javelina in Arizona everyone told me not to eat it and that the taste was just horrible. The second one that I shot I smoked the hinds and then sliced them up nice and thin to take to a house party that a hunting friend was having. His mom was one of the guest and she just hated those little buggers. I took the tray of meat into the house and placed it on the table and by the time that it was gone people were fighting over what was left. They all had asked me what it was and has said that it was so good that they wanted to know what it was and wanted to know how I cooked it.

When I told them you should of seen their faces. Even my friends mom told me that she now has a different opinion of those little critters that would dig up her garden down in Arizona.

That was around 25 years ago and in that time I have only shot one that wasn't fit to eat and all the other 20 or so of them have been devoured by whomever gets the chance to eat some.

I must have gotten the unedible one. I hunted in south Texas a few years ago and we killed one. The guys at the ranch said they would not eat them but I talked them into it. We smoked it up that night. It was pretty good as soon as it came off the smoker. But the next day it tasted like chit.

I have found that you have to get them taken care of. I have had very little left over to try the next day but the meat that I have is just as good cold as it was the hour off of the smoker and is fantastic on a sandwich.

The tongue off my Bison was excellent, I just boiled it and skinned it and ate it, it was too good to try anything else with it, tasted like roast beef, no lie.

Honestly I never did either but after watching quite a few episodes of Steve rinellas meat eater it made me want to try some different things. And I also just want to see the look on some peoples faces when they are eating some mystery meat and like it so much then find out what it is

That dude cooked a coyote over a fire with skin still on and ate it!

Ya he did, I've thought of doing that but I think I'd skin it first and start with a small part maybe a ham just to try it.

The one show with the coyote was quite interesting. Throwing it onto the fire with the skin and hair on and then scraping it off. I don't know if I could handle that. But I agree that if you are willing to shoot it you should be willing to at least try and eat it.

I agree with hat to a point and that's why I don't duck or goose hunt anymore. I have no desire to consume any part of a coyote though. im ok with just killing them and feel morally justified in doing so:cool: if I kept meat from every coyote ive killed there wouldn't be an empty deep freezer in Idaho. if someone prepared it then I may take a reluctant bite.

hahaha, I shot one tonight with my bow, he ran straight to a rabbit in distress call, 15yards, dead yote. after he died and I approached it this thread popped into my head. I grabbed its tail and seen it infested with ticks and I was like ah hell no!

Perhaps the ticks crunch like a peppercorn!:rolleyes:
