Elk seasoning suggestions

I was wondering if you have some suggestions for elk jerky and summer sausage? I used to use LEM for deer seasonings, wasn't sure if some of you have better ideas? Thanks

The brown sugar is the key to the cure!! The only thing I add to mine is a little ground pepper a little salt. I use the same brine for my Elk and deer jerky except I might add some sweet teriyaki mix to the brine if I want teriyaki flavored jerky.Veril Yeri Teriyaki Marinade is what I will add if I want that flavor.

Try Eldon's seasonings, I especially like there jalapeño it's a bit pricy but quite tasty. Also market supply has a pretty good selection.

I have used the hi mountain sausage kits, for a variety of types, we liked the final product. For jerky I mix my own wet cure. I am sure the LEM products are very good too.

I've had great luck with Hi Mountain seasonings for summer sausage and jerky. I double the seasoning on the sausage but follow the recipe to a T for jerky.

One of my best elk jerky batches was made with pineapple puree and habanero sauce, among other seasonings. If you looking for something different its worth experimenting with.
