This is what I have been doing with mine from this past season.
4cups warm water
4cups apple juice
.5 cup salt
4 cups orange juice
.5 cups maple syrup
Put birds in, let sit for one -two days in the fridge.
Take birds out of brine, pat dry and let dry for an hour
Put in smoker at 120 for 6 hours
Crank it up to 200 until the internal temp hits about 164-166
Its pretty good.
