On deer and antelope, all I do is bone out the meat for use in burger. Elk & larger, cut into smaller pieces (like in your picture). I have found if I just smoke them and/or BBQ, they get tough, so I pressure cook them for 5 mins or so. then smoke & BBQ. They are tender and savory that way.
