In wyoming they are considered a trophy game animal and dont have to eat. Back in the good ole days when we would harvest one with dogs we would chop out chunks of the hind quarters to feed the dogs to try to keep there desire up. Until I actually tryed one. from then on they were lucky to get front end chuncks. Hind quarters and straps went in my pack ha ha. It is really good. Like has been said allot like pork.
