I made some venison jerky with the last of my deer from last year. I used a marinade with beer, Soy Sauce, Worchestershire, and lots of black pepper. It's good, and doesn't have any gamey flavor but I'm not a huge fan of the taste of worchestershire.

What homeade seasonings/recipes do you guys use?

I use a salt and brown sugar based brine, and add some soy sauce, pepper, and powdered garlic. Just vary the salt/sugar to suit your sweet to salty preference. Use a non reactive container. You can search for amounts and ratios of salt to sugar online. I've done it so much, I do it by taste.

I make alot of jerky but typically use the prepackaged seasonings from LEM, Backwoods, or Hi Mountain Seasonings although all the sausage I make is by recipes. For homemade recipes I usually forgo the liquid smoke since I smoke the jerky in my smoker. I also make sure to use morton's tender quick meat cure in place of salt. I've had really good luck with sausage and jerky recipes from http://www.lets-make-sausage.com/smoked-venison.html.

I have eaten a lot of jerky and by far my favorite is marinating it in dales sauce and but some kind of pepper seasoning on when I put it in dehydrator or smoker. Heck you could marinate shoe leather with dales sauce and it be good

Try Hi Country jerky mixes made in Lincoln Montana they are awesome!! They also make excellent sausage mixes and brines for a variety of meats. YOU cannot go wrong with these folks.

I really like their jerky, but most of the time when I use there mixes for my own jerky it seems to go bad relatively quick. I have yet to figure out why. Ever have that issue?

What do you mean "go bad"?
If brought to proper temp and cured completely I've never had issues. Some has turned white from the curing salt if it gets warm in the truck tho.

For jerky on the smoker, I like the following recipe:
8oz Louisiana hot sauce
12 oz red wine
4oz soy sauce
1/2 jar jalapeno peppers (or the whole jar sometimes..)
2 tbsp garlic powder
4 tbsp cayenne pepper

Blend until smooth, marinate overnight, smoke until done.
