Any of you duck hunters try Duck Schnitzel? My new go to duck recipe. After you breast out the ducks, cut the breast in 1/2 long ways, pound them a little (not necessary but I do). Season with a little garlic power , sage and flour. Dip in egg an coat with seasoned bread crumbs and cook for 2 minutes per side in oil. Makes a great chicken fried steak and is easy.

Portaballa pheasant is my families favorite. A close second are smoked teal poppers. I have both recipes "perfected" according to my wife. Pm me if anyone wants the recipes.
