I dont know if its because it comes at the end of hunting deer and elk hard or if its just plain fun, pheasant hunting has got to be one of my favorite things to do. Watching that red and white head stick out of cover or watching a dog freeze in its tracks and point just as that bird rises up and is anyones guess as to what way it will fly. Its a rush through and through; it also has to be one of my favorite game meats. So many people just breast them in the field but there's alot of meat on those legs, good meat! This is one of my fav ways of serving up the ole ringneck.

Meats is seasond with a little "slap your mamas" and a misqute dry rub. Sit it on a bed of cream of mushroom and cream of chicken then covered with green onion, leaks and mushrooms (not canned!) Then I drape bacon all over the top and sides as it rests in crock pot. So damn good.
