Elk Recipe to try

butterflied elk tenderloin; lightly marinated in worchestershire & Tony Cachere's original seasoning; stuffed with hot pork pan sausage, jalapeno & colby jack cheese; wrapped in bacon; smothered in zesty italian. Grill on high heat a cpl minutes per side to seal it and bump it over to medium/low to let the sausage stuffing cook.

You should see a pork explosion : spread 1/4" of pork pan sausage on a boneless pork chop, roll the chop up, wrap with several pieces of bacon....smother in zesty Italian & grill....goes good with mac&cheese and twice baked potato (with bacon bits of course)

I'd have to run 100 miles to burn off that dinner.

I'm not running anywhere after that. It's a camp favorite on a beer/deer lease I was on for a few years with a bunch of guys out of Louisiana.
