Hatch chilis are the best! I use them for everything. When I was in AZ last Sept. hunting with my brother who lives there told me he hadn't seen the "chili guy" so far that fall. He was getting worried because he was almost out of hatch chilis and if he runs out there goes my supply too. One day coming into town for lunch we spotted the chili guy and bought two 40lb sacks and had them roasted right there. We let them steam in a cooler for a couple of hours and spent the rest of the afternoon packaging and freezing chilis. Oh I guess we drank quite a few beers and maybe a few Jack Daniels and pepsi too.
