Damnation.......ate the last package of Antelope Breakfast Sausage Sunday morning. I have plenty of spice and bacon ends/pieces for more, guess I'll have to buy some pork shoulder roasts and get to grinding.

I just used my last from 2022. Going to be making a new batch of sausage next week. Looking for a salt free recipe. Have found a few but open to idea if anyone has a good recipe.

I use Hi Mountain sage breakfast sausage seasoning. I also use bacon ends & pieces instead of pork or any added fat. The bacon ends & pieces probably have too much salt tho.

I made snack sticks with a doe i shot during the illinois firearm season. I wasnt prepared like normal and stopped at the farm store on my way home and bought the LEM seasoning. Ive used it in that past and learned that when the package says its good for 5 pounds of meat its really only good for 4 pounds. At least the way i like it. Smoked on my traeger.

The salt free thing is really a bummer. I have so many good recipes that my Dr is telling me I shouldn't eat now. Frustrating. I'll post what I come up with- going to be making some in the next week.

My wife and I havn't salted anything we eat for years. We watch out for the salt in processed food too. BUT certain foods we like that have high sodium content we eat them anyway, just small amounts.

My butcher has a breakfast sausage blend we really like. We eat a lot of that, almost a whole doe every year gets dedicated just to that. With kids getting bigger I am going to have to adjust that soon to have more made.

I went through that with 2 teenage boys in the house. I think our highest year, we went through about 80lbs of breakfast sausage. They loved their breakfast... we are at about 25lbs a year now with just 3 of us. One half pound pack a week give or take.
