I use Hi Mountain sage breakfast sausage seasoning. I also use bacon ends & pieces instead of pork or any added fat. The bacon ends & pieces probably have too much salt tho.I just used my last from 2022. Going to be making a new batch of sausage next week. Looking for a salt free recipe. Have found a few but open to idea if anyone has a good recipe.
The salt free thing is really a bummer. I have so many good recipes that my Dr is telling me I shouldn't eat now. Frustrating. I went through that with 2 teenage boys in the house. I think our highest year, we went through about 80lbs of breakfast sausage. They loved their breakfast... we are at about 25lbs a year now with just 3 of us. One half pound pack a week give or take.My butcher has a breakfast sausage blend we really like. We eat a lot of that, almost a whole doe every year gets dedicated just to that. With kids getting bigger I am going to have to adjust that soon to have more made.
