As the off season wears down it seems I'm left with ground meats mainly. My prime cuts of steak are all but gone but still have some packages of ground elk and venison. Please don't mistake me, the ground meats are awesome as well but nothing beats sinking your teeth into a rare elk back strap steak.

I made this recipe tonight and thought it was awesome. Would be perfect on a cold night.

As always adjust recipe to servings, this recipe could serve 4 or 2 big meals.

2 lbs of ground elk, venison, bison or moose
1 package of sliced button mushrooms
2 cans of condensed mushroom soup
1 1/2 cups milk
Salt/pepper to taste

Cooked brown or white rice

Make patties out of meat and pan sear them. I like a rare/medium burger. Add mushrooms and brown them till they start to wilt. Mix milk and canned mushroom soup together and add it to the mushrooms and burger. Bring that to a light simmer for about 10-15 min. Make sure to stir occasionally .

Pour over rice and add a patty or 2. Salt and pepper to taste........ Enjoy!!
