I love the flavor of wild turkey and think you guys are crazy for making sausage or flavorful sauces for it. To each his own. I cut mine in 1/2” thick strips across the grain, lightly bread them and deep fry it. Get all the wild flavor that way
To be perfectly honest, I really can't taste much of a difference between wild turkey, farm turkey or chicken, when it's breaded and deep fried. I prefer to look at my recipes as enhancing flavor, rather than masking it. We eat a ton of wild turkey here, it would get pretty old just plain frying or smoking it.

We did buffalo style turkey nuggets the other night, pretty tasty as well.
Dredge in flour, dip in egg wash, coat in panko bread crumbs, fry until done, toss in a buffalo sauce. Super easy, super tasty
