The Gutless Meathod, Removing the Tenderloin

It works slick and easy for sure...If you have a small saw or ax with you; you can also easily break off the last 4-5 vertebrae and peel them away and the tenderloin sits right there in full view and you dont have to dig under the spine. I usually do the gutless method for all my personal animals even when i have pack mules. I really like taking the full backstrap instead of cutting the entire carcass into 4 quarters with an axe, which i have done plenty as well.

Nothing wrong with the gutless method. It's the method that I'd recommend.
It's nice to only have to carry one sharp knife. The tenderloins can be removed without hacking or sawing anything. If you find that the space is tight, after you have everything else off, go ahead and in zip the belly to relieve pressure in the abdomen. Tenders are easy to get then. Plus if you didn't ruin the heart, go on up and get it. I know this sounds a little like gutting, but it's very easy.

Like Himtn said, it helps to do them very last and give the gut sack a pop to relieve the pressure. Makes pushing it in to access the tender loins quite a bit easier.

Gutless is the only way I do it anymore. Beats having your arm in the cavity up to you elbow to remove what's left of the vitals.
