Always since I learned it. Makes you wonder why no one figured this out before and why the powers that be didn't teach it in hunters ed.

I will use the gutless method when I have the need. Never could figure out the best way to get the tenderloins out without it getting ugly even with all the youtube videos of today. I dont practice it often anymore as it seems the more I age the closer to the truck I stay ha ha. For me it is easiest from start to finish coming out whole and hanging the critter whole for aging and cooling.

I use the gutless method pretty much all the time, even when I can pull a pickup up to the animal. At some point I'm going to have to break it down and de-bone it so might as well just do it right then.

I always take the front shoulder off before taking the backstrap out though. Seems to work better for me.

+1 to npaden, just seems the more taken apart everything is seems the back strap and tenderloins are easier to get at.
