6 hours! Yikes, hope it doesnt turn into beef chips!

Pro tip - After it's smoked for about an hour and a half or so, and it's nice and medium rare, grab a handful to snack on, while you wait for the rest to actually make it to jerky.
Well I finished on the jerky and it was incredible! I had it at 225 to get the wood chips smoking and then I turned it down to about 175-180. Some of the jerky pieces were done before others so I pulled those pieces of and continued smoking. At the lower temperatures it went slower obviously and took longer to get it done but it really turned out with a nice flavor and moist. Of course I had to pull some off that were as you described about medium rare and chewed on them. They were great too.
