Pickled eggs

The hardest part avout making these is getting my wife to peel 150 quail eggs lol

Some of those look like pretty good size quail.
My first endeavor into making pickled eggs happened a very long time ago.
A friend and I were sitting in a bar and decided to go to his house and make some so off to the store we went. We picked up 12 dozen or so eggs, vinegar, spices, jalapenos, and various other ingredients and headed to his house. We had the eggs boiled and were working on peeling all of them when his wife walked a little past midnight. She was not happy with the sight of the two of us up to our elbows in hard boiled eggs and numerous beer cans sitting on the table. She just went to bed and left us to our jobs. We finished up the peeling chore and went to boiling up the rest of the ingredients. We didn't finish until very early in the morning.
I do remember that after waiting a proper amount of time that we did enjoy a lot of pickled eggs on fishing and bow hunting trips later that year.
