Like I mentioned in the Jerky post. Soak them bad boys in Dales sauce put some steak seasoning on it wrap in bacon. I promise it does not get better than that. I have come to find a lot of people in the west have never heard of dales sauce. In the South it is a staple. They sale it just about every grocery store even in Powell Wyoming

you should try it. you buy the marinade in the worchersire section. cavenders Greek seasoning sprinkled on afterwards is awesome with it. it's how I do steak too minus the bacon

I bet that would be good for elk too. I always like to add a few splashes of chipotle/tobasco, gives it a zing that compliments that beautiful wild game flavor.
