For me it always depends on how far back I am. If I am over the 3 mile mark deer hunting, its all coming out in one trip. Elk are big enough that it won't matter how far, if I am backpacking it out, more than one trip is necessary.

With the right type of pack and careful selection of your equipment, you can bring out your whole camp and a boned out deer in one trip. South Cox did this last season I believe and his pack weighed over 125 pounds. Now, that's only if you can handle that kind of weight. Elk will always require more than one trip and how many, again depends on what type of pack and the amount of gear you have. The first week of last month, I went on a late-season cow elk hunt with a friend here in Wyoming and he was lucky enough to tag out on one of the largest cows I've ever seen. After we boned her out, she fit in two packs and we got her down the mountain in one trip. My pack, with meat and all my gear weighed a shade over 105 pounds. What this hunt told me was that for me and my abilities; I feel I could easily take a boned out deer and my camp out in one trip. I use an Eberlestock Blue Widow pack and can't speak highly enough of it. Yes, they are a sponsor of ours but for good reason, we believe in them. Check out those style of packs for what you're looking to do and you won't be disappointed.
