Elk shanks

Cooked up some elk shanks from my last cow elk. They came out absoutely delicious and they took a lot less time to cook than last years antelope shanks.
Seasoned and floured them before browning in a dutch oven then cooked in a crockpot with mushrooms, onions, carrots, celery and a few spices for about 5 hours. They were so tender they were almost falling off the bone.
The marrow was delicious too, just like beef marrow but more intense.
