Elk rib recipe?

I take the ribs and cut then into 2 racks per side with a meatsaw. I then pressure cook a rack for about 5 minutes. Then BBQ them just like pork ribs. Lots of meat down in the brisket area. Pressure cooking tenderizes it.

For years I never bothered with the ribs. A friend showed me how cook the ribs this way and they are really great.

Use a beef rib style rub with pepper and smoke indirect for a few hours. Wrap in foil and let em steam a few hours. Unwrap and baste in Texas style sauce. Put em back on over the coals for 10 or 15 minutes.

Some day I'll shoot an elk where packing out the ribs will be an option. We've been just packing out the meat between the ribs.

Get the silver skin off. Boil them in a large pot of water and spices of your choice for about 20 min. Then bake them at about 250 for about an hour. After that, BBQ them, basting in your preferred sauce until they are ready.

this is a generic recipe, but it works great.
