I use my Green Mountain Pellet grill (with cold smoker attachment) for fish and some other smoking chores.
For Jerky I use my Cabelas Dehydrater. For an easy recipe I just soak thin strips of elk meat in Yoshida with some crushed red pepper.
I soak it over night then dehydrate for about 7 hours. Turns out great if you like the teriyaki flavored stuff.
My preferred recipe is a lot more complicated but worth the effort
