was a small quarter, I did 2.5 hours, turning every 30 min. my goal was to have it buried in coals for a few hours but was running short on time. Crimson, you didn't see the bottom, it was burnt pretty bad. triple wrapped with heavy duty foil, bottom layer wetted with olive oil. been watching a lot of meat eater and its giving me some great ideas.

the outside was crisp and hard but meat under was great, nice and juicy. a little smack your mamma sprinkled on it made a great treat.

I tried a big moose femur in hot oak coals once, cause I wanted to try the marrow. Well, the whole thing burned up in about 20 minutes. There was almost nothing left. Next time I'll let the coals burn down more.
