I made some antelope shanks for dinner yesterday from the buck my son got last week. I just cut them off the bone because I don't have a meat saw.
They're kind of small but more than enough for 2 people.
I just browned them up real good after seasoning with garlic salt and pepper and rolled them in flour.
Sauteed some onions, mushrooms and garlic and nestled them in the crockpot with some diced tomatoes, beef broth, a couple of bay leaves, a sprinkle of ground thyme and let them simmer on high for about 7 hours. They were so tender it was unbelievable they were the tough old shanks from an antelope.
Let me tell you they were delicious! Put them on garlic mashed potatoes and the were a meal fit for a king.
