So I used the time, temp from Meateaters whole smoked trout recipe. The brine and dip was from the Traegers smoked trout dip recipe.

I use my Green Mountain. its alot better at keeping exact temps than most smokers.

Gonna use em in a dip if I can let them cool and not eat em all.

Froze my ass off in the rain and sleet catching these guys. Brought home 8 fat ones. They are brining now, will smoke em tomorrow and use them in a smoked trout dip. Got to watch this guy for a little also.

Really difficult and costly to get hardwood out here. Everything is soft, burns quick, creosote issue in the chimney etc etc.
