In no particular order:

Utah San Juan elk early rifle (I should draw within 5 years on points)

Arizona Strip for mule deer (I should draw within 8 years on points)

Arizona Desert Bighorn (I should draw within 15 years on points)

1-Alaska combo Moose & Mountain Caribou

2- Argentina Bird Hunting

3- NM guided Elk

Everything in the biggame is rifle as I don't bowhunt. I am working on all three as I am getting up there in years.Looks like I might get the Alaska hunt in in 2013.

Man this is a tough one!

1- Marco polo sheep with a bow. ( a big one!)
2- big pig with a spear. No particular breed just a nasty hog with a spear.
3- stud Muley velvet flatland desert buck somewhere random like chihuahua Mexico. With a bow

All hunts would be sweet stories while sitting around the fire.

I really don't have 3 that I have to have. I always wanted to hunt grizzly or coastal brown bears, with a rifle, but for the sake of my son and maybe grand kids and other hunters everywhere , here is my list

1. Grey wolf
2. Mexican wolf
3. Arctic wolf

Hope I'm not being hoggish, but you did ask for three, and it could be done on one trip whether I was successful or not. Just the trip and the experience would be enough.

1. Alaska, Upper B.C., Yukon, or NW Territories on a guided hunt for moose, grizzly, and sheep.
2. Bighorn ram here in Montana DIY
3. Grizzly bear hunt here in Montana DIY

To that end I have to add that my mountain goat hunt last fall was incredible even though I never got a goat! I loved it and the time I spent, most of it by myself, in the mountains!
